Hot n' Spicy Valentines

For my valentine, I made dinner and to keep things in the proper theme, tonight was Mexican. To start we had some tortilla soup, and then the main course was enchiladas (from the weight watches cook book).

Overall, I enjoyed both while Britgal was more fond of the soup - the enchilada filling was made of ground chicken, chick pea and black bean. The chick pea and black beans are not her favourite, but she did eat it and it wasn't as bad as she originally thought it might be. Next time, I think I'll puree the chick peas and perhaps use corn or some other veggie. I did tweak the recipe a little adding some jalapenos as well as making an enchilada sauce to soak the tortillas and wrap with. It's basically just some onions and spices (chili etc) but did give a much more complete flavour. The picture in the WW cookbook showed the enchiladas as plain, and the stark white tortilla shell just didn't look all that great IMHO.

We'll cap off the evening with a movie - The Departed. The rest is not blog worthy :)
