Rules for chili:
1. always taste during cooking
2. chili will always be at least x2 as hot when served when compared to single taste tests
3. intensity of both spice and heat rises as simmering continues
4. a chili without some spice or heat is just meat with gravy
5. chili is always served twice (at least) :)
